Vodopivec Vitovska Origine is a white macerated wine made in artisan old style. Made from Vitovska, a variety native to the Karst area. The yield per plant is 0.50 kg per plant and the average altitude of the vineyards is 260 m above sea level. Harvest is manually performed.
Vinification: Grapes were crushed in large cone oak barrels, fermented and macerated for 15 days without temperature control and without the addition of industrial yeasts. After 15 days of maceration, the wine is aged in large barrels of 3000L for 30 months and then bottled without filtration and without the addition of stabilizers.
Lemon yellow, pure and clean scent, with a strong parmesan scent upon opening and then transcends to fruits and yeast. On the palate there’s soft saltiness, flint, walnuts with a mild oxidative touch, a pleasant bitterness with a lot of length and a good balance. Vital and gastronomic.
