A light, citrusy, biodynamic Pet Nat coming from Štajerska - the extreme northeastern portion of Slovenia (near the borders with Austria and Hungary). It is made from the Furmint grape variety (or Šipon as they call it in Slovenia). The grapes were hand-harvested and macerated in stainless steel for 48-hours with wild yeast to maximize the fruit character after which followed bottling and final fermentation.
This Pet Nat has touches of yellow apple, hints of fresh orange, and pear. It's refreshing with only a bit of sediment and has a well-integrated acidity and an elegant lemony minerality. Due to its light body, it is served best as a starter.
