
Macerated on the skins for a month. Exposure to air transforms it into a beautifully expressive wine with scents of fresh pineapple, lemon and mandarin and peach flavors that blend into rich baked pears, ginger and honey. The texture is chewy and dense, cooled by a rush of acids that keeps the flavors juicy and bright.
After spontaneous fermentation and a month of maceration, the wine matures for 18 months in 225-litre barrels of French oak (barik) and then for another year in bottles. No filtration.
