This biodynamic medium bodied white is made from 100% Zelen variety and is made by a small family winery. Zelen (Slovenian for ‘green’) is the most famous indigenous variety of Vipava valley, which, due to limited supply, is still hard to come by. The grapes are handpicked and then undergo a spontaneous fermentation with 4 days of maceration. The wine is produced according to the old Vipava method that requires for the initial phase of vinification to be carried out in open containers and only later the wine is moved to large closed barrels. One of the rare few Zelen aged in large oak barrels, in this case 12 months on lees in 1600-litre oak barrels. This bestows a high degree of complexity and herbaceous character on the wine.
